After a crazy morning at the Drs, screaming babies at medlab and a fight to get said babies to nap I needed a decent lunch! This took all of 15 minutes to prep and cook. I say cook, but it’s just steaming the veg in water and adding leftover wild rice from dinner last night. You can use whatever veg you have as long as it cooks quickly!

15 minute lunch:

Ingredients:

3 mushrooms quartered

1/2 red onion

2 sweet capsicum (the mini ones)

6 cherry tomatoes

1 stem of kale

1.5 cups rice

1 garlic clove

Soy sauce

Salt

Pepper

Nutritional yeast

2 tbsp water

Method:

Chop veg

Heat up a shallow frying pan and add the water

Add veg to the pan and let it steam for a few minutes. Don’t stir too much. I like my veg crunchy so I only cook it for 5 minutes.

Add the rice and mix. Add soy sauce, salt, pepper and nutrional yeast. Add more seasoning to your liking and enjoy!
